This October, SHOAL Activity Centre is launching a new feature – Cookbook Lunches! On Tuesday, October 27, 12 noon – 2 p.m. with Chef Angelo Prosperi-Porta, award-winning Chef from Sooke, appearing as guest speaker at a buffet lunch that features not only a recipe from his newest book, HONEY – Everyday Recipes for Cooking and Baking with Nature’s Sweetest Secret Ingredient, but a wonderful overview of this great cookbook.
Inspired by his profound respect and admiration for bees, Chef Angelo pays tribute in the cookbook to “those first few brave souls who gathered honey from hives in the wild and to those who began and continue to work in what we know now as the honey industry…and to the honeybees themselves – without which we would be missing not only a delicious and nutritious source of natural sugar but also approximately 30 to 35 percent of the fruits, nuts and vegetables we consume.”
Published by TouchWood Editions, the book begins with a Forward by Bob Liptrot, Master beekeeper at Tugwell Creek Meadery, and continues with an extensive Introduction that includes a look at the world of bees, honey varieties, non-culinary/medical uses of honey; challenges, and tips for substituting honey for sugar, as well as a wealth of delicious recipes.
